Htipiti - Greek Spicy Red Pepper & Feta Dip

Ingredients:

  • 1 ⅔ cup (8oz), feta cheese, patted dry and broken into large crumbles
  • ½ cup, roasted red peppers, patted dry and roughly chopped
  • ¼ cup, Rallis Ice Pressed® Olive Oil, some extra for garnish
  • 1 tbsp, fresh lemon juice
  • ¼ tsp, cayenne pepper, or to taste
  • 1 tsp, freshly ground black pepper to taste
  • Crushed red pepper flakes, for garnish

Instructions:

  1. Using a food processor/blender, combine: feta, roasted red peppers, Rallis Ice Pressed® Olive Oil, lemon juice, cayenne pepper and freshly ground black pepper.
  2. Process the ingredients until your dip appears evenly blended and smooth, it is nice to have small pieces of feta remaining for texture and if you over blend it can feel gritty.
  3. Taste your dip and see if it is to your spice level, feel free to add more cayenne if you like it hot. Additionally, you can stir in some finely crumbled feta after processing for some extra texture.
  4. Transfer to a serving bowl, lightly drizzle with Rallis Ice Pressed® Olive Oil and sprinkle some red pepper flakes for garnish and enjoy!
