Ingredients:
- 3 fresh ripe tomatoes cut into wedges
- 1 cucumber, sliced and halved
- 1 small red onion, sliced
- 1 cup Kalamata or Black Olives
- 1/2 cup Goat Feta Cheese, crumbled
- Optional - 1/2 head of iceberg lettuce, chopped
- Optional - 1 small green pepper, chopped
- Optional - 1/2 cup pepperoncini
Dressing:
- 6-8 tbsp Rallis High Polyphenol Ice Pressed® Olive Oil
- 2 tbsp red wine vinegar
- 2 tbsp dried Greek oregano
- 1 tbsp parsley
