The Simplest Cucumber Salad

Looking for a quick and easy salad recipe that's both delicious and healthy? Look no further than this refreshing cucumber salad recipe! This is one of my favourite salads! Normally I make it with red onion, but today I felt like leaving the onion out.

Cucumbers are a great source of hydration and vitamins, and combined with the fresh dill, this salad is a burst of flavor and nutrition. And the Rallis Olive Oil not only adds a great taste to the dish, but it's also full of healthy fats that are great for your heart and brain!

Ingredients:

  • 2 large cucumbers, thinly sliced
  • 1 small red onion, thinly sliced (optional)
  • 1/4 cup chopped fresh dill
  • 1/4 cup Rallis Olive Oil
  • 2 tablespoons white vinegar
  • Sea Salt and black pepper to taste

Instructions:

  1. In a large bowl, combine the sliced cucumbers and red onion (optional)
  2. In a separate bowl, whisk together the Rallis Olive Oil, white vinegar, sea salt, and black pepper.
  3. Pour the dressing over the cucumber and onion mixture and toss to coat evenly.
  4. Sprinkle chopped fresh dill over the top and gently toss again.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend.
  6. Serve chilled as a refreshing side dish or a light lunch.

This salad is perfect as a side dish for a summer barbecue or a light lunch on its own. It's easy to customize too – you can add some sliced cherry tomatoes or feta cheese for extra flavor and nutrition.
