Looking for a quick and easy salad recipe that's both delicious and healthy? Look no further than this refreshing cucumber salad recipe! This is one of my favourite salads! Normally I make it with red onion, but today I felt like leaving the onion out.
Cucumbers are a great source of hydration and vitamins, and combined with the fresh dill, this salad is a burst of flavor and nutrition. And the Rallis Olive Oil not only adds a great taste to the dish, but it's also full of healthy fats that are great for your heart and brain!
- 2 large cucumbers, thinly sliced
- 1 small red onion, thinly sliced (optional)
- 1/4 cup chopped fresh dill
- 1/4 cup Rallis Olive Oil
- 2 tablespoons white vinegar
- Sea Salt and black pepper to taste
- In a large bowl, combine the sliced cucumbers and red onion (optional)
- In a separate bowl, whisk together the Rallis Olive Oil, white vinegar, sea salt, and black pepper.
- Pour the dressing over the cucumber and onion mixture and toss to coat evenly.
- Sprinkle chopped fresh dill over the top and gently toss again.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend.
- Serve chilled as a refreshing side dish or a light lunch.
